How
many times has this happened to you? Your delicious

this may not be a good idea. According to the July
2010 issue of the National Geographic, Dr. Paul
Dawson, a food scientist at Clemson University, has
discovered that "salmonella and other bacteria can
survive up to four weeks on dry surfaces and
transfer to food immediately upon contact." So, the

Q. Help! My shipment from Microbiologics sat in the warehouse all weekend. It was not refrigerated. Do I have to throw away the microorganisms?
A. Your organisms are fine. Shipping Stress Studies performed at Microbiologics showed that non-enumerated microorganisms are stable for two weeks at room temperature and enumerated microorganisms are stable for one week.

Pediococcus damnosus is called damnosus because that's what some techs say when they can't get it to grow. Always remember to grow P. damnosus on MRS agar at 25° C (not 35°) in 5-10% CO2. An alternative media is MRS broth. More information can be found in the
